Pea Pod Salad

pound pea pods, cooked until tender-crisp and chilled
1
cup cherry tomatoes, halved
1
8 ounce can water chestnuts, drained and sliced
1
bunch green onions, chopped

 

 

Dressing

 

 

1/3
cup vegetable oil
1
tablespoon white wine vinegar
1
tablespoon lemon juice
1/2
teaspoon salt
1/2
teaspoon sugar
1
clove garlic, minced

 

 

Combine dressing ingredients and mix well.  Place pea pods, tomatoes, water chestnuts and green onions in a salad bowl.  Toss with dressing just before serving. 

 

Serves 6 to 8.
