Shrimp Salad

pound shrimp, cooked, peeled and deveined
1/2
cup mayonnaise

tablespoons lemon juice
Pinch cayenne pepper
1
tablespoon minced chives
1/2
cup diced celery, chilled
1/2
cup diced cucumber, chilled
Lemon wedges
Lettuce

 

 

Mix all but celery and cucumber while shrimp is warm.  Chill 2 to 3 hours.  Add celery and cucumber and mix well.  Salt and pepper as desired.  Serve on bed of lettuce with lemon wedges. 

 

Serves 4.
