Spinach Salad

bunch fresh spinach, washed and stems removed

green onions, chopped

fresh mushrooms, sliced

sliced bacon, cut in pieced

pound Monterey Jack cheese, grated

hard-boiled eggs, chopped (see Hard Boiled Eggs Recipe)

cup red wine vinegar
1/4
cup sugar

teaspoon salt
1/4
teaspoon garlic powder

tablespoons lemon juice
1/2
teaspoon Worcestershire sauce
1/3
cup vegetable oil

 

 

Fry bacon until crisp; drain on paper towel and set aside.  Mix vinegar, sugar, salt, garlic powder, lemon juice, Worcestershire sauce, and salad oil and shake well.  Slice mushrooms and marinate in salad dressing (vinegar mixture).  Mix salad dressing, mushrooms, spinach and green onions.  Serve in salad bowls.  Top with bacon, eggs and cheese. 

 

Yields about 6 dinner salads.
