Spinach-Strawberry Salad

bunches spinach, rinsed and torn into bite-size pieces

cup sliced strawberries

tablespoons sugar

tablespoon finely shredded orange peel
4
tablespoons orang juice
4
tablespoons white wine vinegar

tablespoons finely chopped onion

teaspoon pepper

teaspoon poppy seeds
2/3
cup vegetable oil

 

 

In a blender container combine sugar, orange peel, orange juice, vinegar, onion and pepper.  Cover and blend until combined.  With the blender running, slowly add vegetable oil in a steady stream through opening in top.  Blend until mixture is thickened.  Stir in poppy seed.

 

Place the spinach in a serving bowl.  Top the spinach with the strawberries.  Drizzle with dressing and serve. 

 

Serves 6 to 8.
