Turkey of a Salad

cups loosely packed torn romaine lettuce

cups loosely packed torn radicchio

cups cubed cooked turkey

cup vertically sliced red onion

11-ounce can mandarin oranges, in light syrup, drained

cup orange juice
1 1/2
tablespoons red wine vinegar
1 1/2
teaspoons poppy seeds
1 1/2
teaspoons olive oil
1/4
teaspoon Dijon mustard

teaspoon salt
1/8
teaspoon pepper

 

 

Combine first 5 ingredients in a bowl.  Combine orange juice and remaining ingredients in a bowl, stir well.  Pour over salad, tossing gently to coat.  Serve immediately.  Yield:
