Vermont Marble Inn Vegetable Slaw

cup champagne or white wine vinegar

tablespoon dried oregano, crushed

tablespoons coarse-grained mustard

teaspoons coarse salt

teaspoons pepper

cup olive oil

medium head green cabbage, shredded

medium head red cabbage, shredded

bunch green onions, thinly sliced

celery stalks, cut into 3 inch long julienne

red bell peppers, cut into 3-inch julienne

medium carrots, peeled and shredded

medium zucchini, cut into 3 inch julienne

 

 

Whisk first 6 ingredients in large bowl.  Gradually whisk in oil in thin steady stream.  Add all remaining ingredients. 

 

Toss well, chill.
