Vinegared Cucumber Slices

 

This recipe is a Japanese style one.  The small Japanese cucumbers work best with this if you can find them.   Regular cucumbers work fine too.

tablespoons fresh lemon juice

tablespoons rive vinegar
1/4
cup sugar
1/4
teaspoon salt

European-style or large regular cucumber, rinced, dried, sliced paper-thin

 

 

In a medium bowl, combine lemon juice, rice vinegar, sugar and salt.  Stir well to dissolve sugar.  Add cucumber slices.  Cover and marinate in the refrigerator 3 to 4 hours.  Drain well. 

 

Makes 1 cup.
