Broiled Crab-wiches

cup fresh crabmeat or imitation crab

cup mild Cheddar or American cheese

cup onion, minced

tablespoons green onion, finely chopped

tablespoons red bell pepper, minced

tablespoons celery, finely chopped

tablespoon fresh parsley, finely chopped

tablespoon lemon juice
1/2
teaspoon salt
1/4
teaspoon ground white pepper
1/3
cup mayonnaise
3
sourdough or wheatberry-type English muffins (Pacific Bay)

 

 

In a medium-size mixing bowl, combine all of the ingredients except the English muffins.  Mix well and place in the refrigerator, covered, and let the flavors marry well. 

 

Lightly butter each muffin half, then place under broiler and lightly toast.  Spread crab mixture on each muffin half, place on a baking sheet and broil, second rack down, until the mixture bubbles and the cheese has melted.  Remove and serve immediately. 

 

Makes 6 open face crabwiches.
