Yummy Egg Salad Sandwiches

hard-boiled eggs, chopped
1
tablespoon sweet pickle relish
1
tablespoon finely chopped celery
1/2
teaspoon Dijon mustard
Mayonnaise or Miracle Whip
Salt and pepper to taste
Butter, room temperature
6
slices whole wheat bread

 

 

Combine eggs, relish, celery and mustard.  Add enough mayonnaise to moisten to a good consistency for spreading.  Add salt and pepper.  Butter 3 slices bread, spread with egg salad and top with remaining slices. 

 

Serves 3.
