Hearty Turkey Vegetable Soup

 

 

Turkey Carcass

sliced carrot

onion, chopped
A few celery leaves

teaspoons salt

bay leaf

cup cubed potatoes

cup sliced carrotsw
1
cup sliced celery
1/4
cup chopped onions
1
teaspoon salt
Pepper to taste
1
package frozen noodles, thawed
2
cups cooked turkey meat, diced
1
cup frozen peas

 

 

Place first 6 ingredients into a large stock pot and barely cover with water.  Cover and simmer for 2 to 3 hours.  Strain broth.  Measure out 2 quarts stock and return to stock pot.  Add the potatoes, remaining carrots, onions, celery, salt and pepper.  Bring to a boil.  Add noodles; simmer 20 minutes.  Add turkey and peas; heat thoroughly and serve. 

 

Makes 8 servings.
