Multi-Bean Soup

 

This recipe is low -fat, high carbohydrate and just plain delicious as well as being healthy.  I make up the bean mix ahead, using 1/2 cup of each bean.  This makes enough beans for 4 recipes of this soup.

cups dried beans (10 to 12 different kinds)

teaspoon ginger

large onion, chopped

teaspoon lemon pepper

tablespoon barbecue sauce

small clove garlic, minced

16-ounce can tomatoes
1/2
teaspoon chili pepper
2
tablespoon ketchup
2
stalks celery,chopped

 

 

Wash the beans thoroughly.  Place them in a large kettle and cover with 6 cups of cold water.  Soak overnight.  In the morning, without draining, add the ginger.  Bring to a boil and cook until the mixture is tender, 2 hours or so.  Add the remaining ingredients.  Bring to a boil, then reduce the heat and simmer for 2-1/2 to 3 hours.  Stir and add water as needed. 

 

Serves 4 to 6.
