Northern Bean Soup

Bean Soup 

I love bean soup and this is one of my favorites.

cups water
1
pound dried Great Northern of lima beans (about 2 cups)

8-ounce can tomato sauce
2 1/4
pounds smoked pork hocks

large onion, chopped
1
tablespoon instant beef bouillon
1
teaspoon salt
1/2
teaspoon pepper
1
clove garlic, crushed
2
cups mashed potatoes or diced potatoes
2
medium carrots, cut into 1/2-inch pieces
2
medium stalks celery, cut into 1/2-inch pieces

 

 

Heat water and beans to boiling in Dutch oven; boil 2 minutes.  Remove from heat; cover and let stand 1 hour.

 

Add tomato sauce, pork hocks, onion, instant bouillon, salt, pepper and garlic to beans.  Heat to boiling; reduce heat.  Cover and simmer until beans are tender, about 2 hours.  Skim fat if necessary.

 

Remove pork hocks; trim fat and bone from pork.  Cut pork into 1/2-inch pieces.  Stir pork, potatoes, carrots and celery into soup.  Heat to boiling; reduce heat.  Cover and simmer until vegetables are tender, about 45 minutes.  Stir in 1 or 2 cups water for thinner consistency. 

 

Makes 8 servings.
