Easy Bean Tostadas



Tostadas make an easy lunch.  You can use leftover shredded chicken on them if desired or  ground beef made for tacos.  We often break the tostada shells in half before assembling to make them easier to pick up and eat.  The tostada shells can be found where taco shells are located and also often where fresh tortillas are located in the store.  I usually buy a cellophane bag with about 20 tostada shells in it.  You can also add diced avocado, sour cream, salsa, etc.



16-ounce can refried beans
precooked tostada shells
cup mild or medium taco sauce
cup shredded cheddar cheese
cups shredded lettuce
diced tomato, or 1/2 cup drained diced canned tomatoes


Heat beans and taco sauce in separate saucepans until warm. 
Cover each tostada shell with 1/4 of ingredients, in the following order:  beans, taco sauce, cheese, lettuce and tomato.  Shredded cooked chicken or cooked ground beef may be added on top of taco sauce if desired. 


Makes 4 tostadas.
