New Years Black Eyed Peas

A New Year's Dinner tradition. It supposed to bring you luck in the New Year. Happy 2016!

pound dried black-eyed peas, soaked overnight and drained

Well seasoned chicken broth or water
3/4
pound ham, cubed
1
cup grated carrot
1
cup chopped onion
1
tablespoon minced garlic
1
tablespoon dried thyme
Salt to taste

 

 

Place peas in a Dutch oven.  Cover with chicken stock.  Add ham, carrot, onion, garlic, and thyme.  Cover and cook over low heat 2 hours or until peas are tender.  Season with salt to taste. 

 

Serves 8.
