Cajun Fried Okra

pound okra

eggs
1
tablespoon water

cup all-purpose flour
1 1/2
teaspoons Cajun spice blend
1/2
teaspoon salt
1/2
cup vegetable oil

 

 

Wash okra, cut off ends and cut into 1/2 inch slices.  Mix eggs and water in a small bowl.  Mix flour, Cajun spice and salt in another small bowl.  Dip okra into egg mixture, then coat with flour mixture.  Repeat with remaining okra.

 

Heat oil in 10-inch skillet until hot.  Fry okra in oil in single layer over medium-high heat 4 to 5 minutes or until golden brown, turning halfway through cooking.
