Crumb Topped Tomatoes

tablespoons butter

cup fresh bread crumbs

garlic clove, pressed
2
tablespoons chopped fresh parsley leaves

teaspoon salt
1/8
teaspoon coarsely ground black pepper
4
plum tomatoes

 

 

In skillet melt butter over low heat.  Add crumbs and garlic and cook, stirring, until lightly browned.  Remove skillet from heat and add parsley, salt and pepper.

 

Cut each tomato in half horizontally.  Top each half with some of the crumb mixture.  Grill over medium heat and cook until hot but not mushy, 8 to 10 minutes. 

 

Serves 4.
