Green Beans a la Orange

teaspoon salt

pound fresh green beans

tablespoons butter
2
tablespoons slivered almonds or pine nuts
1
tablespoon orange peel zest or strips

 

 

In 10-inch skillet bring water and salt to a full boil; add beans.  Cook over medium heat 5 minutes.  Cover; continue cooking, stirring occasionally, until beans are crisply tender (10 to 15 minutes).  Drain; set aside.  In same skillet, melt butter until sizzling; add almonds.  Cook over medium heat, stirring constantly, until golden brown (1 to 2 minutes).  Add beans and orange zest.  Cover; continue cooking, stirring occasionally, until heated through (5 to 6 minutes). 

 

Yield 4 servings.
