Green Beans Almandine

pound fresh green beans

ounces fresh mushrooms
1/2
medium onion minced
1/2
cup slivered almonds
1/2
cup butter

 

 

Bring 4 quarts water to full boil in a large Dutch oven.  Clean green beans.  Place beans in boiling water and cook just until done, approximately 5 minutes.  Drain and place in ice water to cool quickly.  Can be prepared up to this point and refrigerated until just before serving.

 

Melt 1/4 cup butter in a large skillet.  Add almonds and sauté until lightly browned.  Remove almonds from skillet.  Wipe out skillet and melt remaining 1/4 cup butter.  Sauté onions and mushrooms until tender.  Add beans and almonds and heat and stir just until beans are hot. 

 

Makes 5 servings.
