Honeyed Carrots with Ginger and Orange

pound carrots, trimmed, pared and cut crosswise into1-inch pieces

cup orange juice

2 inch strip lemon rind

tablespoons honey

tablespoon unsalted butter
1
tablespoon crystallized ginger, finely chopped
1
teaspoon grated orange rind
1/4
teaspoon slat
1/8
teaspoon black pepper

 

 

Combine carrots, orange juice, lemon rind, honey, butter, crystallized ginger, orange rind, salt and pepper in large skillet with enough water to just cover carrots.  Bring water to boiling.  Lower heat; simmer, covered for 6 minutes.

 

Uncover.  Increase heat to moderately high; cook carrots, shaking pan occasionally, until almost all liquid is evaporated and carrots are nicely glazed, 10 to 15 minutes. 

 

Serves 4.
