Honey Sliced Carrots

cups scraped and sliced carrots

tablespoons honey
3
tablespoons unsalted butter
1/4
teaspoon salt
1/2
teaspoon freshly grated nutmeg
3
tablespoon fresh lemon juice

 

 

Mix all ingredients in a skillet with a tightly fitting lid.  Cook, covered, over medium-high heat until the liquid evaporates and the carrots begin to just brown.  If they are tender and there is still liquid in the pan, remove the cover and boil it down rapidly.  The timing of this can vary greatly, depending on the thickness of the slices and the age of the carrots--10 minutes more or less.
