Linda’s Mashed Potatoes  

 Linda's Mashed Potatoes



pounds russet potatoes
cup half and half
cup butter
Salt, pepper



Bring water to boil in Dutch oven or large saucepan.  Add salt.  Peel potatoes, cut into large chunks and boil in salted water for 25 to 30 minutes, or until soft but not mushy.  Drain off water.  Put pan back on burner to dry off potatoes.  Remove from heat.


Heat half and half and butter until butter is melted.  Do not boil.  Beat potatoes with electric mixer until mashed.  Add salt and pepper to taste.  Add hot half and half mixture and beat to desired consistency.  The amount of half and half may vary.  Taste and adjust salt and pepper. 


Serves 8.
