Shredded Potatoes Au Gratin

cups sharp Cheddar cheese, shredded

cup Mozzarella cheese, shredded

medium to large baking potatoes
2
cups whipping cream
1
teaspoon salt
1/4
cup soft bread crumbs
1
tablespoon melted butter

 

 

Combine cheddar and Mozzarella cheeses and set aside.  Place potatoes in large pot, cover with water, bring to a boil and cook 10 minutes.  Drain and cool.

 

Preheat oven to 350 degrees.  Peel and coarsely shred potatoes.  Lightly grease a 2-1/2 quart casserole dish.  Layer bottom of dish with half of the potatoes, top with half of the cheese mixture and repeat.  Combine whipping cream and salt; pour over potatoes and cheese.  Sprinkle with bread crumbs and drizzle with melted butter.  Bake uncovered 45 minutes to 1 hour.

 

Serves 8 to 10.
