Snow-Whipped Potato Boats

large baking potatoes

slices bacon
1/2
cup sour cream
1/2
cup milk
1 1/2
teaspoons salt
1/8
teaspoon pepper
4
chopped green onions
1/2
cup shredded Cheddar cheese

 

 

Preheat oven to 400° F.  Wash potatoes and rub skins with oil.  Bake for 1 hour, or until potatoes are done.  While potatoes are baking, cook bacon until crisp.  Drain and crumble; set aside.  Reduce oven heat to 350°F.  Cut a slice from top of each potato and scoop out pulp.  Mash pulp; add sour cream, milk, salt, pepper, and green onions.  Fill potato shells with mixture and sprinkle with shredded cheese and crumbled bacon.  Bake at 350°F. for 10 minutes. 

 

Makes 6 servings.
