Stir-Fried Spinach

tablespoons butter
2
pounds fresh spinach, washed and dried, stems removed
Freshly grated nutmeg

 

 

 

In a large 12-inch sauté pan, heat the butter until sizzling.  Stir-fry the spinach for about 45 seconds, stirring constantly, or until the spinach just begins to wither.  Remove from the pan and serve immediately, with a sprinkling of nutmeg.
