Sweet Potato Croquettes

pounds yams or sweet potatoes

tablespoons butter, melted

cup firmly packed light brown sugar

teaspoon ground cinnamon

teaspoon vanilla extract

large marshmallows

cups crushed cornflakes

 

 

 

Scrub sweet potatoes; cook in boiling water 45 minutes to 1 hour or until tender.  Drain well and let stand until cool enough to handle.  Peel and mash; stir in next 4 ingredients.  Cover and refrigerate until chilled.

 

Form croquettes, shaping scant 1/3 cup sweet potato mixture around each marshmallow.  Roll in cornflakes, pressing lightly to form 2-inch thick patties.  Deep fry in batches in hot oil (375°F.) until browned.  Drain. 

 

Serves 8.
