Zesty Vegetable Skewers

cup olive or vegetable oil

tablespoons lemon juice

teaspoon Italian seasoning

medium fresh mushrooms

small zucchini, sliced 1/2 inch thick

small onions cut into sixths

cherry tomatoes
4
wooden skewers (10 inches)

 

 

in a small bowl, mash garlic with salt to form a paste.  Stir in oil, lemon juice, Italian seasoning and pepper.  Thread vegetables alternately onto skewers; place in a shallow baking pan.  Pour garlic mixture over kabobs; let stand for 15 minutes.  Grill for 10-15 minutes, turning frequently, or until vegetables are just tender.
