Almond crumb cake is my new favorite brunch. And breakfast and dessert! And to make the almond crumb cake even more delicious


  • Batter:
  • 2 tbsp butter softened

  • 2 oz cream cheese softened

  • 1/3 cup Trim Healthy Mama Gentle Sweet or my sweetener

  • 4 eggs

  • 2 tsp almond extract

  • 4 oz half and half

  • 1/2 cup almond flour

  • 1/2 cup coconut flour

  • 1/2 cup ground golden flax or additional almond flour

  • 1 tsp baking powder

  • 1/4 tsp. salt

  • Topping:
  • 6 tbsp butter melted

  • 1/3 cup Trim Healthy Mama Gentle Sweet or my sweetener

  • 1 cup almond flour

  • 1 cup sliced almonds toasted


  • Preheat oven to 350. Grease a square 8×8 pyrex with butter or cooking spray.
  • In a bowl with an electric mixer combine all the batter ingredients. Mix thoroughly. Pour into the baking dish and spread evenly.
  • Combine topping ingredients and mix until crumbs form. Sprinkle on top of the batter.
  • Bake at 350 for 40 min until golden. If the topping starts to get dark cover with foil for the last 10 minutes.
