Homemade Oatmeal Cream Pies Recipe

One of my preferred Little Debbie nibble cakes are Oatmeal Cream Pies. Sure I love Zebra Cakes, Fudge Rounds, and Swiss Rolls, however my heart will consistently go to those delicate and chewy cereal treats first.

In secondary school and school I would purchase and cover up boxes of these sandwich treats in my room. I’m almost certain those treats and my affection for french fries dunked in mayo were not the most brilliant nourishment decisions I caused developing to up.

Oatmeal Cream Pies pack well in lunch boxes to provide a big smile when your little someone discovers their treat.

Ingredients

  • For the Cookies
  • 1/2 cup unsalted butter

  • 1/2 cup shortening

  • 3/4 cup brown sugar

  • 1/2 cup granulated sugar

  • 1 Tablespoon molasses

  • 1 teaspoon vanilla extract

  • 2 large eggs

  • 1 1/2 cups all purpose flour

  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • 1 teaspoon cinnamon

  • 1 1/2 cup quick oats

  • For the Filling
  • 1 Tablespoon hot water

  • 1/2 teaspoon salt

  • 1 – 7 jar jar marshmallow cream

  • 1/2 cup shortening

  • 1 1/2 cups powdered sugar

  • 1 teaspoon vanilla extract

Directions

  • Preheat the oven to 350 degrees.
  • Beat butter, shortening, and both sugars until creamy.
  • Add molasses, vanilla, and eggs and beat again.
  • Stir together flour, salt, baking soda, and cinnamon. Slowly add the dry ingredients to butter mixture until combined.
  • Stir in oats and drop by teaspoon on baking sheets. Bake for 10-12 minutes or until edges are lightly brown.
  • Let cool for a few minutes on the pan, then remove to a wire rack to cool completely.
  • Dissolve the salt in the hot water and set aside.
  • Beat the marshmallow cream, shortening, and vanilla until fluffy.
  • Slowly beat in the powdered sugar until combined. Add the salt water and mix well.
  • Spread marshmallow frosting on one side of half the oatmeal cookies and press the rest of the cookies on top.
